Quinoa Stuffing (Gluten Free & Vegan)

Are you seeking a gluten-free, vegan alternative to more conventional stuffing recipes? This Quinoa Stuffing is not only an excellent source of fiber and protein, but it is tasty and gentle to your digestive tract with only quality, nourishing ingredients.

Ingredients:

{yields 6 servings}

  • 1 cup quinoa, rinsed well
  • 2 cups organic vegetable broth
  • 1 bay leaf
  • 1 heaping cup organic celery, diced
  • 1 medium white onion, diced
  • small handful of fresh sage, chopped {about 2 tablespoons}
  • 1/4 teaspoon garlic powder
  • 1 tablespoon extra virgin olive oil
  • Sea salt
  • Pepper, freshly ground

Fun Optional Ingredients!

  • If you’d like to add more substance and texture to your stuffing, you can add wild rice, as well (seen in picture). Simply prepare roughly 1-2 cups of rice (depending on the ratio you prefer) per normal (using water), and combine into the stuffing mix before placing everything into the oven-safe dish. *Please note: You’ll probably need to adjust seasonings and broth amounts accordingly.
  • Keep your tastebuds guessing! For a little added sweetness to compliment the savory flavors in this recipe, you can add a sprinkling of unsweetened, dried cranberries to the end product.

Instructions:

  1. Preheat oven to 375 degrees.
  2. Bring 1 cup of vegetable broth to a boil in a medium pot.
  3. Add quinoa, bay leaf, salt, pepper and stir.
  4. Set stove to low heat and simmer with a lid on for 10 minutes.
  5. Turn off the heat {do not lift lid/allow the steam to escape}
  6. Allow the quinoa to steam for another 10 minutes.
  7. Heat the olive oil in a saute pan over low heat.
  8. Add in the chopped celery and onion.
  9. Cook until they begin to become clear, about 5-10 minutes.
  10. Turn the heat up to medium and add in the vegetable broth, sage, garlic powder and season with more salt and pepper if needed; simmer for a few minutes.
  11. Combine the quinoa with the veggie mixture
  12. Add the last 1/2 cup of vegetable broth, stir together well.
  13. Place the stuffing mix into a greased oven safe dish.
  14. Bake at 375 for 10 minutes.
  15. Broil under a low flame until the top becomes golden brown. (Add more broth to the mixture before baking if you like more moist stuffing 🙂
