11 May Strawberry Shortcake Protein Pancakes

But, if your momma is anything like me, the way to her heart might also be through her stomach…If so, spoil her even more with this delicious and healthy (and pretty) stake of strawberry shortcake protein pancakes! She deserves it! 🙂
Ingredients
- 1/2 cup chopped strawberries
- 1/4 cup flour ( Bob’s gluten-free mix works great!)
- 2 tbsp rolled oats
- 1 Serving FITTEAM LEAN Vanilla Protein
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1 tbsp sugar or pinch stevia
- 1/3 cup milk of choice (I like to use non-dairy versions, either hemp or almond, unsweetened.)
- 1 tbsp coconut oil (Omit only if you like the taste of fat-free pancakes.)
Instructions
Strawberry Shortcake Pancakes: Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on a greased pan, on low-medium, flipping each pancake once. You can boil some more strawberries (with a bit of sugar if you wish) and smash them to make a compote.
