10 May Colorful Spring Salad Jar Recipe
There are no exact “rules” for what to use or how to layer, except to put liquid on the bottom and foods that absorb liquid the most at the top, that way, you won’t have a soggy mess 😉
Here’s a suggested way to layer with some yummy options:
- BOTTOM: Dressing/liquid
Examples: Olive Oil and Vinegar (red wine vinegar, apple cider vinegar, or balsamic)
- MIDDLE LAYER: Heavy ingredients that hold up well when soaked in dressing and don’t absorb liquid very easily, followed by more heavy ingredients you might not want to directly touch dressing. Slice, chop, or dice these.
Examples: Beans, cucumbers, radishes, onion, bell peppers, carrots
- MIDDLE LAYER: Leafy greens/light ingredients that take up a lot of space – spinach, kale, chard, arugula.
- ACCENTS: A small amount of heavy accent items
Examples: Nuts, seeds, dried fruit, croutons, accent spices, grains/pasta or animal proteins*
*PRO TIP*:This is a good place to add grains or proteins like chicken because they’re slighting heavy items that weigh down the greens (so you can fit more in the jar 😉 and won’t absorb all of your dressing.
- TOPPINGS: – Nutritious and fun foods to perk up your taste buds and spring out at you when you open the jar
Examples: Fruit, edible flowers, herbs
Jar Pictured Above (in order of layering):
- 2 tbs EVOO/Balsamic Dressing
- ½ Cucumber, diced
- 1 Tomato, diced
- Arugula & Baby Spinach (1 handful)
- Pistachios (½ serving)
- Edible flowers (Fun!)
- 4 Dried Apricots
